Method

  1. Slice the leek into fine rings, chop the broccoli very small, cut the kale into strips without the tough stalks. Finely chop the garlic.
  2. Heat the olive oil in a wide pan. Soften leek and broccoli for 4 minutes, then toast garlic, cumin and cayenne pepper for 1 minute.
  3. Add kale and spinach in batches and let them wilt. Season with a splash of water, salt and pepper.
  4. Press four hollows into the greens with a spoon and crack an egg into each. Cover and cook over low heat for 6 to 8 minutes, until the whites are set and the yolks still soft.
  5. Stir the yogurt smooth with a little lemon juice and a pinch of salt.
  6. Roughly chop the coriander and parsley and scatter them over the shakshuka. Serve straight from the pan with the lemon yogurt.
