Ingredients for 2 servings

  • Broccoli250 g
  • Kale100 g
  • Pomegranate seeds100 g (½ fruit)

Method

  1. Cut the broccoli into small florets. Peel the stalk and slice it thinly – it is the most tender part and usually gets thrown away.
  2. Blanch the broccoli for 2 minutes in boiling water, then drop it straight into iced water and drain. That keeps it crisp and bright green.
  3. Strip the kale from its hard stems and shred it finely. Massage it for one minute with 1 tbsp of olive oil and a pinch of salt. That makes the leaves tender and takes the bitterness out.
  4. Halve the pomegranate and knock the seeds out over a bowl with a spoon. Chop the walnuts coarsely and toast them in a dry pan for 2–3 minutes until they smell nutty.
  5. Stir the remaining olive oil with the turmeric, the juice of the half lemon and plenty of pepper. Turmeric needs fat and pepper: curcumin is fat-soluble, and the piperine in pepper slows how fast the body breaks it down. That is why it goes into the dressing and not over the finished salad.
  6. Toss the broccoli and kale with the dressing. Scatter the pomegranate seeds and walnuts on last and serve straight away.

Cabbage and nuts alone are too austere for some. These three additions round the salad off. We calculated each one so you can decide for yourself:

  • Cranberries, 30 g dried – they make it better. Sweet and sharp between the florets, and the salad climbs from the Top 50 into the Top 20. The only addition on this page that improves the rank.
  • Buffalo mozzarella, 100 g torn – creamy in the middle. The side dish becomes a meal, and the salad stays in the Top 50.
  • One orange, segmented – fruity against the cabbage. Also Top 50. Drop the lemon from the dressing then, or it turns too sharp.

All three stay well inside the better half of over a thousand foods. A salad you enjoy beats the perfect one you leave standing.

Variations

Every variation is calculated. Where the band changes, it says so.

  • Cider vinegar instead of lemon: 2 tbsp of cloudy apple cider vinegar in the dressing. The salad jumps from the Top 50 into the Top 20 – the single biggest improvement on this page. Stronger and less fresh in taste, which you have to like.
  • As a whole meal: add 120 g of cooked chickpeas. Properly filling, and the salad stays in the Top 50.
  • In winter: replace the broccoli with finely shaved Brussels sprouts. Also a crucifer, same band – Top 50.
  • Without kale: if you cannot get it, leave it out and use 350 g of broccoli. The salad stays in the Top 50 but loses the lutein and part of the vitamin K.

Which foods count as particularly cancer-preventive?

At the top of the Food Secrets cancer ranking sit cruciferous vegetables such as broccoli, kale and Brussels sprouts, berries and pomegranate, walnuts, spices such as turmeric, and extra virgin olive oil. Why does the turmeric go into the oil and not over the salad?

Because curcumin is fat-soluble. Without fat most of it stays in the gut, and without pepper it is broken down very quickly. The piperine in black pepper slows exactly that breakdown. Oil, turmeric and pepper therefore belong together in one step.

Does the broccoli have to be raw?

It may be, but it does not have to be. Sulforaphane only forms when an enzyme in the broccoli splits the glucoraphanin, and that enzyme does not survive long heat. Two minutes of blanching followed by iced water keeps the colour, the bite and most of the enzyme. Twenty minutes of boiling does not.

Can I use ready-packed pomegranate seeds?

Yes, fresh seeds from the chilled shelf are equivalent and save a lot of work. Pomegranate juice is not a substitute: it has no fibre, and part of the punicalagins sits in the white membranes that stay behind when the fruit is pressed.

How long does the salad keep?

About an hour once mixed, after which the kale softens. Prepared separately, blanched broccoli and shredded kale keep for two days in the fridge, and the dressing for a week in a jar.
