Ingredients for 2 servings
- King oyster mushrooms or porcini250 g

Plus pepper and salt to taste. Neither is in the ingredient list, so the rank above matches what the app calculates after the import.
Method
- Toast the sesame seeds in a dry pan over medium heat for 2–3 minutes, until fragrant and lightly coloured. Take them out immediately – they burn fast.
- Clean the mushrooms and cut them into thick slices. Do not wash them, just wipe: mushrooms soak up water and then will not brown.
- Heat the pan with 2 tbsp olive oil until properly hot. Lay the mushrooms in a single layer and fry undisturbed for 2–3 minutes, until the underside is golden. Only then turn them.
- Slice the garlic thinly and fry it with them for the last minute. It should go golden, not brown – burnt garlic turns bitter.
- Take the pan off the heat. Scatter the oregano, marjoram and chili over the hot mushrooms: the residual fat releases the aromatics without scorching the herbs.
- Roughly chop the parsley. Scatter it with the sesame over the pan, squeeze over the half lemon and serve straight away.

Mushrooms and herbs alone are too spare for some. These additions turn it into something you would put in front of guests. Each one is calculated:
- Buffalo mozzarella, 125 g in the middle – as in the picture. The warm pan melts it at the edges and the dish becomes a plate for company. It costs the Top 100, and the best goal moves from immune system to cancer. For an evening for two that is the right trade.
- Parmesan, 30 g freshly shaved – if the goal should stay. Also Top 100, but immune system remains the best goal. Of all the cheeses the only one that manages that, and salty enough that you need not season further.
- Cherry tomatoes, 150 g – fresh and sharp. Top 100, best goal cancer. With the mozzarella it becomes practically a warm caprese with mushrooms.
- Cream, 2 tbsp at the end – for a sauce. Makes the pan round and everyday, also Top 100. If that is the difference between cooking and not cooking, it is the right decision.
Even with cream the pan still sits inside the best ten percent of more than a thousand foods. Good food you actually eat beats perfect food you avoid.
Variations
- As a whole meal: add 150 g cooked quinoa or a slice of wholemeal bread. Far more filling, but it costs a few places in the rank.
- More protein: two poached eggs on top. Egg yolk itself sits in the Top 25 of the immunity ranking.
- Warmer in winter: 1 tsp turmeric with the herbs. Turmeric is in the Top 10 for immunity – and shifts the profile towards heart.

Which foods strengthen the immune system most?

Why should I not wash mushrooms?
Mushrooms are more than 90 percent water and soak up more like a sponge. Wet mushrooms release it back into the pan and then steam in their own liquid instead of browning. Wiping with kitchen paper or a brush is enough.
Can I use dried instead of fresh herbs?
Dried is what is meant here. The ranking rates oregano and marjoram in their dried form, because the polyphenols concentrate into a smaller weight. Parsley goes in fresh, though – with parsley some of the active compounds are lost in drying.
