Ingredients for 2 servings

  • Kale (curly kale)200 g
  • Apple cider vinegar2 tbsp
  • Flaxseed, ground20 g

  • Oregano, dried1 tsp

Method

  1. Wash the kale. Strip the leaves off the tough central stalk – it stays chewy however long you massage it. Cut the leaves into narrow strips.
  2. Add the olive oil and apple cider vinegar. Now comes the one step that really matters: knead the kale hard with your hands for 2 to 3 minutes, until it turns darker and glossier and loses noticeable volume.
  3. Scatter over the cinnamon and oregano and mix briefly again. Leave for ten minutes – the acid keeps working into the leaves in that time.
  4. Toast the pumpkin and sesame seeds in a dry pan for 2–3 minutes, until fragrant and starting to pop. Take off the heat and let them cool.
  5. Stir in the ground flaxseed only now. Whole flaxseed passes through undigested – ground flaxseed goes rancid, so add it just before eating.
  6. Divide the salad between two plates, scatter the toasted seeds over and season with pepper. If you like, scatter a handful of dried cranberries over now.

Raw kale with vinegar sounds austere. It does not have to be. These three additions are calculated, and the first is practically free:

Variations

  • As a whole meal: stir in 150 g cooked lentils. Properly filling and it suits the goal – pulses are the carbohydrate with the slowest curve.
  • With protein: add 100 g cottage cheese or two hard-boiled eggs.
  • Milder: swap the kale for spinach. Far more tender, but the salad loses its structure – and a few places in the rank.

Why do you have to massage kale?

Raw kale is tough and tastes bitter. Kneading it with oil and acid breaks the cell structure of the leaves mechanically – they turn soft, darker and considerably milder, and the salad collapses to about half its volume. Two to three minutes is enough, and you feel the moment clearly.

Does apple cider vinegar really help with blood sugar?

Acetic acid before or with a carbohydrate-rich meal is well studied, and apple cider vinegar sits in the Top 50 of our blood sugar ranking. It replaces no treatment, though, and the effect is small compared with what the meal itself does. If you have diabetes, discuss changes with your doctor.

Which foods are good for blood sugar?
